This is my go-to breakfast when I want to feel full, but not gross. The combination of protein and vegetables leaves you feeling clean and energetic for the whole morning. Feel free to tweak this, adding in different vegetables or protein sources. You can even just stick to eggs if you want.
1/2 cup sliced mushrooms
Small handful diced onions
1/2 cup diced tomatoes
Large handful fresh spinach
2 whole omega-3 eggs, lightly beaten
4 ounces of turkey polska kielbasa
Olive oil spray
Heat a nonstick pan over medium heat and spray with olive oil spray. Saute mushrooms, onions and kielbasa until well cooked. Add in tomatoes and spinach, stirring until spinach is wilted, about 3-4 minutes. Pour the eggs over the veggies and cook thoroughly. Top with a small sprinkle of parmesan cheese and salt and pepper.
