Almond, Coconut + Date Bites

As I write, I’m currently (very) pregnant, and having quick, healthy snack options is a must right now. Even when I’m not pregnant or nursing, if I don’t have something easy on hand, I end up opting for the not-so-great drive-thru options or raiding the bag of chips in the pantry. And while there may be a time to savor a few chips, if that’s my go-to snack on a regular basis, my body ends up feeling sluggish and unsatisfied.

I love having these Almond, Coconut + Date Bites ready in the fridge or freezer. They don’t require a lot of ingredients, and while you can substitute chocolate chips, I recommend opting for much healthier cacao nibs. The sweetness of the dates seems to be enough, in my opinion, to offset the bitterness of the nibs. You can also double the batch and store some in the freezer!

P.S. While these are a healthier alternative to many store-bought snacks, dates are still high in sugar (even though it’s natural sugar). Practice mindful snacking!

Ingredients

SERVINGS:
30 1½ inch-sized bites

2 cups raw, unsalted almonds

1 cup shredded, unsweetened coconut flakes

15-16 Medjool dates, pitted

½ cup cacao nibs (or sub chocolate chips)

¼ cup coconut oil

½ teaspoon kosher salt

Directions

Add all the ingredients to a food processor. Pulse a few times to mix everything together, then continue to process until the mixture is crumbly. Everything should look relatively uniform in size, so if you have any large pieces of almonds, pulse a few more times to chop them up.

Shape into balls, pressing the mixture firmly together so it sticks. Shaping them can get a little messy. I’ve found it helps to put a little coconut oil on my hands and work over a large bowl so extra crumbs fall into the bowl rather than all over my kitchen.

Place on a baking sheet and freeze until firm (at least a half hour). Transfer to a zip-top bag or airtight container. Store in the fridge for a week or so, or keep them in the freezer for up to several months.
