Don't be fooled by the green color...this still tastes like creamy pumpkin pie! It's hard to make a smoothie that doesn't have any fruit in it, only veggies. Well, here it is! This smoothie is perfect if you want something sweet, but need to eat fewer fruits. Pumpkin can easily go sweet by adding some vanilla and cinnamon. If you have a dairy allergy, simply omit the Greek yogurt.
1/2 cup unsweetened vanilla almond milk
1/4 cup pumpkin puree
1/8 cup nonfat plain Greek yogurt (no need to measure this...just do a big dollop)
1 large handful spinach1 big scoop vanilla whey protein powder
1 Tbsp flax meal or almonds
1/4 tsp cinnamon
Dash of vanilla extract
Couple dashes of raw sugar or stevia
1 cup ice (or more if you want it extra thick)
Place all the ingredients in a blender in the order listed. Blend for 30-60 seconds on high until smooth.
