I can't take credit for this one, and I won't even try. I discovered this on Kalyn's Kitchen, and didn't even want to tweak anything. This is hands down my favorite crockpot recipe. It's loaded with protein and veggies, and makes plenty for lunches or dinners for days to come. Even my picky kids like this soup! Make sure you add this into your regular dinner rotation.
5 links Italian turkey sausage (may use hot if you like it spicy)
2 tsp olive oil
2 cans petite diced tomatoes with juice
2 cans cannellini beans, drained & rinsed
2 Tbsp minced garlic
2 tsp oregano
2 tsp basil
½ tsp fennel seeds
1 ¼ cup chicken stock
4 cups chopped kale
Brown the sausage in an oiled pan over medium heat. Once cooked mostly through, slice the sausage and add to the crockpot with all the other ingredients, except the kale. Cook on low for 5 hours or on high for 2 ½ hours. Add the chopped kale and cook for another 45 minutes. Optional: serve topped with a sprinkle of parmesan cheese.
