I won't take full credit for this recipe. I discovered a crockpot version of my favorite lentil soup at Dashing Dish, but I made a couple of my own tweaks, adding turkey sausage and more vegetables. This recipe makes a huge batch, so you can have leftovers for days.
1 full package of turkey polska kielbasa (13 oz.), halved & sliced
1 onion, chopped
4 large carrots, peeled and chopped
3 celery stocks, chopped
2 (14oz.) cans diced tomatoes
1 1/2 cup dried lentils, rinsed
4 cups chicken broth
1 tsp garlic powder
1 tsp cumin
1/2 tsp thyme
Parmesan for garnish
Stir all the ingredients, except for the Parmesan cheese, together in a crockpot. Cook on high for at least 6 hours, or on low for 8-10 hours. The lentils should be soft and the onions translucent and cooked through. Serve with a sprinkle of Parmesan cheese (optional).
