This picture does NOT do this meal justice. This stew was absolutely devoured by my entire family. Everyone loved the heartiness and comfort of this simple recipe. This is incredibly easy to make, and I really loaded it up with veggies. It tastes great reheated the next day for lunch!
1 medium onion, chopped
2 cups carrots, diced
1 8oz. package sliced baby bella mushrooms
1 15oz. can diced tomatoes in juice (no sodium added)
1 1/2 cup reduced sodium beef broth
1/2 cup all purpose flour
3 cloves garlic, minced
2 Tbsp worcestershire sauce (can omit if necessary)
1 tsp salt
1 tsp dried marjoram
1 tsp dried oregano
1 tsp dried basil
Freshly ground pepper to taste
1 pound stew meat, trimmed, cut into 1/2 inch pieces
1 cup fresh or frozen peas
Mix all the ingredients except the beef and peas in a large crockpot. Combine well and then add the beef. Cover and cook on low for 8 hours. Just before serving, stir in the peas and cook for another 5-10 minutes.
